This chicken rice bowl takes about 30 minutes from start to finish, prep and cooking included, and I make it on busy nights when cooked rice is already in the fridge. I stir mayonnaise and chili powder into the charred corn, then add lime for a cool topping (nice against the warm rice).
Season the chicken well, then use a skillet or grill pan over medium-high heat. I let it rest before slicing. That keeps the juices off the cutting board, and I pull it once the thermometer reads 165°F.
The bowl comes together in layers, with warm rice underneath and the corn mixture, red onion, cotija, and cilantro piled on top, and I like the lime wedges set right on the table. Squeeze one over the bowl before eating to cut through the mayonnaise and salty cheese.
It's easy to set up several servings in advance when the rice is ready, and for a family-style meal, arrange the components on a large platter and let everyone build their own bowl with extra lime wedges nearby.
